The specialized food and nutrition course is the first year of a two-year course sequence taught at the high school level. Students enrolled in specialized food and nutrition are interested in a career path in food service and hospitality or food science, dietetics, and nutrition. Topics include: nutrition, health, and fitness; food safety and sanitation; facilities and equipment; meal management; food preparation techniques; meal service and etiquette; food and culture; and high skills careers related to food and nutrition. Based on the new CTE Hospitality, Tourism, and Recreation Industry Sector content standards, this course provides rigorous, standards-driven instruction and assessment, integrates academic and career-technical concepts, and contributes significantly to students’ academic achievement.
